Traditional Yorkshire parkin was the first recipe created in the Lottie Shaw’s bakery. Today, both our Yorkshire parkin cake and Yorkshire parkin biscuits are award-winning recipes. In our heritage recipe, the treacle in the parkin caramelises and hardens when it is cooked. Following tradition, the parkin is then kept in the bakery to rest until the caramel softens again.
